Earlier in this thread, digdirt mentioned that it would be bad to use fresh lemon juice when bottled is called for. I can only imagine there may be an acidity difference between fresh and bottled?

However, is bottled lemon juice actually of a normalized acidity, like vinegar? If not, there's no guarantee of a particular acidity. The type of lemon juice in jam is not an issue because jams are already acid products and the lemon juice serves other purposes acid for pectin formation, flavor. So you can use fresh or bottled, whatever suits. The exception would be pepper jellies, which generally call for vinegar as the acid; there it's needed to compensate for the low-acid peppers in the mixture.

Bottled lemon juice is standardized, so yes, in that way it's comparable to commercial vinegars. Fresh lemon juice, on the other hand, will vary considerably in acidity depending upon variety, season, growing conditions, degree of ripeness when picked, etc. That's why bottled lemon juice is specified in recipes like marinated peppers. For consistently safe results it's important to have assurance of sufficient acidity.

Bottled lemon juice and bottled lime juice are more acid than vinegar. Therefore, whenever a canning recipe calls for vinegar, you could safely replace it with bottled lemon or lime juice.

However, if a recipe specifically calls for bottled lemon juice don't substitute vinegar, as it's a weaker acid. Saw many there yesterday, as well as very cheap herbs and spices packed in small bags.

Related Discussions Slate countertop from pool table staining Q. I'd like to chime in here.

I have had black pool table slate counters in my kitchen for 4 years. Something keeps staining them white. I can't figure out what it is. It often happens when I'm not around we rent out house out sometimes so I'm not always here when it happens.

It's not wine though, not oil, not coffee, for sure blackberries did it once. My best guess is water. Seems strange, but there are a lot of round glass marks and water is the most likely candidate.

Anyone have any experience getting white marks out of black pool table slate and best products for sealing it? Meyer lemon leaves dropping Q. Last year was very healthy and got a few lemons off. This year we had some new growth but it suddenly stopped and the leaves started turning yellow and dropping. I did some research and read nitrogen deficiency Could be the cause.

I used some Earth Juice to increase the nitrogen. The ph is currently 5. I live in Colorado and the weather has just become warm enough to move the tree outside. I am not sure if it is the fertilizer that is causing the leaves to turn white or what. Any help is appreciated. Meyer lemon leaves Q. Last year it was healthy and had some good growth. We got a few lemons off and after that it had another period of new leaves around January.

The soil PH is currently 5. I just went through this decision. I could still change it, but I'll share how I came up with our plan, that is anything but perfect!

I went through two decisions. One was how to treat the water, and the other was to gizmo or not. I wanted a gizmo for no other reason than I am lazy! For me, it was a worthwhile splurge although I don't believe the one I was looking at was 5k. I decided against it. The reason I didn't go with the gizmo is what someone else mentioned.

I found out they are LOUD. They can go off at any moment, not just when you are getting a glass of sparkling water. That was a deal killer for me. We were even going to put the unit remotely and run a line to the kitchen, but someone wisely pointed out that the water in the lines wont be cold, so I'd have to waste water to get to the cold stuff.

I couldn't stomach wasting that much water so often, not to mention standing there for that much longer. That would have only worked with a water conditioner, because I don't want to drink softened water for taste reasons. Now I'm planning to get an RO system. I don't love RO water, in the least! But, we have to soften our water, and after doing a taste test at neighbors homes, I know I don't like the taste of softened water more than I don't love RO.

I'm just going to have to add lemon or something because I'm determined to get off the water bottle habit when we move. I considered a water conditioner and not a softner so I could just get a great filter so I could skip the RO because minerals taste good! But, there is just not enough good information out there and I don't want to chance getting build up on everything. From what we could tell, a conditioner is better than nothing, but it doesn't work as well as a softener, if you have hard water.

So, softner is it. We are getting the whole house charcoal filter. Yes, it's correct that you aren't supposed to use RO for the life of the coffee maker AND because the coffee wont be as good.

However, I've decided I just need to take that chance because I don't want softened water in my coffee either. I will be using softened water to cook with, but I figure that is ok because we salt our food anyway. In a perfect word, I wouldn't have softened water in the kitchen at all, but I don't want to get build up in the miele combi. So, I don't love our solution, but I couldn't figure out a better plan. If anyone has anything to add, I'd love to hear it.
